Does Mexican American mean she was born in the USA but her family is from Mexico? For that matter, am I European Irish American or just European American? I get confused…

I spent christmas here with my roommate and her two kids and their spouses and her grandchildren. My roommate’s name is consuelo, she is a mexican american. Very sweet lady. She is very into her evangelical church and keeps thinking she will convert me LOl.
