So, i’m thinking those of us with good recipes should post them on the site somewhere – especially mom. You need to post your dressing recipe and your peach cobbler recipe. Also, don’t you have a good recipe for chocolate brownies and/or cake. And I’m sure you have many, many more. And Brenda needs to post her delicious chocolate pudding cake recipe. And I know Beth has plenty too! Hmmm…now I’m hungry.

  2. Maria, I just don’t know how to give the recipe for my dressing, because I don’t measure anything. I fry about eight cornpones, add one large bag of PEPPERIDGE FARM STUFFING (no other kind is good), six eggs, one can condensed chicken soup, one package onion soup mix. About four stalks of chopped celery, and one large onion.

    Meanwhile, you should have boiled a fat hen in large pot, and pour the broth into dressing mixture, along with one cup of milk. Then boil hen some more, and add one-half stick butter, and add broth again. Do this until the dressing is at the proper texture. You don’t need any sage or poultry seasoning, because it is all in the large bag of Pepperidge Farm Stuffing.

    CORN PONES: As best as I can give it:

    One pound of corn meal. One cup of flour. Two eggs. Enough milk to make a good pone to fry. Heat oil slowly, and slowly add the pone. Don’t cook too fast. You’ll have to be your own judge about frying it and turning it over properly, so that it doesn’t burn. Eight was enough for the dressing that I made for Thanksgiving. The recipe above made two large glass Pyrex dishes (9 X 13).

    Bake in oven at 400 degrees until it is golden brown all over.

    CABBAGE SLAW: One cabbage. One bell pepper (red or green) and one onion – all chopped up in a bowl.

    Boil together: One cup of vinegar, one cup of vegetable oil, one cup of sugar. When it begins boiling…pour it over the vegetables. Store in refrigerator for at least 24 hours. Drain. eat. yummy.

    KILLER CHOCOLATE CAKE: One cake mix (preferably Pillsbury or Betty Crocker); one small pudding mix; one 12 – ounce
    semi-sweet morsels.

    Mix cake as directed…then add pudding mix. Mix together well. Then fold in morsels. Bake in a bunt pan.

  3. Arroz con Leche
    (Rice Pudding Recipe)

    3 Cups Whole Milk
    1 Cup Rice
    2 Egg Yolks
    6 Table Spoons Sugar
    Cinnamon

    Pour Milk into sufficient size Pot and stir in Rice. Bring to a very low boil with a medium-low heat stirring
    bottom of the pot every 3-4 minutes to keep from scorching. Let simmer until very bland (between 45-60 minutes)

    Combine egg yolks and sugar in a large coffee mug. Using the handle of a soup spoon, continuously stir and whip yolks
    and sugar between trips to stir the rice and milk. It should be very creamy & frothy by the time the rice is done.

    Spoon the rice and milk into a a large bowl or dish and add the egg yolk mixture. Fold it into the rice until
    thoroughly blended. Sprinkle the top with cinnamon.

    Wonderful warm or chilled.
    (*The making of Arroz con Leche is a very social occasion. Usually 2 or more friends split the tasks while chatting in the kitchen.)

    Dad has a bunch of different things you can add: coconut milk, raisins, etc…:)

  4. Awesome Squash Casserole

    2 c. cooked squash
    1 med. onion, chopped
    1 8-oz. carton sour cream
    2 tbsp. butter
    1 can cream of chicken soup
    1-1/2 c. grated cheddar cheese
    1 pkg. stuffing mix (I use Pepperidge Farm herb seasoned in blue bag – not cubed – and I do not usually put a whole bag)

    Combine all ingredients and stir well. Pour into casserole dish and cook on med. heat until golden brown.

  5. Bud, thank you so much for both of those recipes. I hope the one for the rice pudding is the one that we had at your house when Luis and I ate there one evening. It was so pleasant. The meal was fabulous, and I could have devoured the whole bowl of rice pudding all by myself, and I did have three helpings. Melissa’s chicken was so moist and delicious. And the kids just quietly came to the table one at a time.

    Also, I’m glad to have the squash recipe. I might use it for the Christmas dinner. I know I would love it. It tastes so similar to my dressing, because I use Pepperidge Farm in my dressing now. I think I made that same squash casserole a few years ago, and nobody appreciated it but Luis and me. It is truly delicious.

    Does anybody have a recipe for Peas Au Grautin? I lost mine? Who has a recipe for the unbaked fruit cake made with graham crackers? I’ve got to get busy. At least twelve people are invited….and two missionaries, unless they have plans to go somewhere else. They usually get together with all of the missionaries somewhere, maybe in the mission home or the Bishop’s home.

    Buddy, it would be so wonderful if you and your bunch could come down, but I know the chances are slim to 0.

    Just know that we love you, and we have a mattress we can blow up, and two sofas to sleep on, and lots of blankets.

  6. On the Triple Chocolate Cake. Better just put in six ounces of chocolate chip morsels. I just remembered that the last time I made the cake, the twelve ounces just seemed to be too much.

    Here’s an easy, easy recipe for Chocolate Chip Cookies.
    I think you were over here Maria when Sara Roderiquez gave us this recipe. I tried it the other day, and they were delicious.

    You use any kind of cake mix. I used a Marble Cake Mix.
    You mix in 2 eggs and 2/3 cups of vegetable oil. Stir it well. If it seems to need a little more moisture, then add one or two tablespoons of water. I didn’t need the water. Fold in six ounces of chocolate chips.

    drop by tablespoons on cookie sheet. Bake at350 degrees for about 8 minutes. They are surprisingly good. So good that I had to give most of them to Luis to take to the Temple last Tuesday, because I was eating too many of them. Jani was in Jacksonville, and Jordan is limited. Luis is disciplined, and that left me to do the gobbling.

  7. Mom’s Potato Salad

    Peel, cut up in medium pieces six (preferably red potatoes), but Irish will do. Just don’t boil them all to pieces, until they are much.

    When potatoes are done, and cooled: you can add a mixture of any of the following, all of it has to be to your taste. I don’t have any amount to give you specificallyS:

    Mayonnaise-try one-half cup for starters.
    mustard: about one or two teaspoons
    salt
    pepper
    one medium onion
    four boiled eggs
    dill and sweet relish..add both or only one…according to your taste.
    onion and garlic salt…according to your taste.
    ranch dressing…two tablespoons

    leave off the apple if you don’t like it.

    You can try other things, like Dill Weed and Ground Turmeric, for a little extra taste.
